Apple pomace is smoked using a blend of maple and applewood chips. Our original small batch hard cider is run through the smoked pomace. The result is a full-bodied deep amber cider. Strong crisp apple notes with hints of vanilla are balanced on an applewood smoked backdrop.

We here at Woodchuck Hard Cider have been pioneering American cider for 23 years now. It’s been a journey and we trace our history through the different ciders we have handcrafted. Innovation and experimentation are woven into the fabric of Woodchuck.
It is in this spirit that we introduce to you, (just in time for Valentine’s Day!), one of the most unique ciders we have ever crafted: Woodchuck Cellar Series Chocolate. It is the third cider released from our Cellar Series line.
Woodchuck’s original small batch hard cider, featuring Vermont culinary apple varieties such as McIntosh and late season Northern Spy, was aged with crushed cocao beans. Cocao beans, or nibs, are the starting point from which chocolate is produced.
The infusion of the cocao nibs bring notes of artisan chocolate throughout the nose and taste of the cider. A hint of caramel accompanies the dry finish, as does a full apple flavor.

“The use of crushed cocao nibs allowed for this cider to showcase chocolate’s true character,” says Cider Maker John Matson. “The infusion of the beans brought out those strong natural chocolate notes, without the sweetness found in a chocolate bar. The balance of the apple against the cocao creates a truly distinctive tasting experience. I am thrilled with the result and hope our fans are too.”

A little more education: We are going to try to feature either a grape or a wine region each week at our stores. We will give you some background information on the grape or region and feature a wine that highlights what we are featuring. We will taste that wine on Saturday at all four of our locations. Grape: Cabernet Franc
Cabernet Franc is a black-skinned French grape variety grown in most wine producing nations. The variety is most famously known as the third grape of Bordeaux and can be found in many of the world’s top Bordeaux blend wines. Cabernet Franc most commonly appears in blended red wines, where it adds herbaceous accents of tobacco and dark spice.

Cabernet Franc is commonly compared to Cabernet Sauvignon, which is not without justification; the Cabernet Sauvignon variety is the result of a cross between Cabernet Franc and Sauvignon Blanc. (Recent DNA profiling has also shown that Cabernet Franc is also one of Merlot's parents). But in the vineyard, Cabernet Franc ripens at least a week earlier than Cabernet Sauvignon

Cabernet Franc prefers cool, inland climates such as the Loire Valley. The towns of Chinon and Saumur-Champigny are important historical bastions of varietal Cabernet Franc wines, which are prized for their ripe berry and spice elements. Lighter examples from these appellations generally exhibit graphite and red licorice notes, with darker wines showing more cigar and leather aromas.

2011 Domaine Aime Cabernet Franc....$14.99

Technical Notes:  100% Cabernet Franc.  After the grapes are harvested they are 100% destemmed, crushed, then fermented and aged in tank before bottling.  The grapes are sustainably farmed, and vinified using indigenous yeasts. There is no oak aging for this wine.
Tasting Notes:   This is a rich ripe Cabernet Franc, with none of the vegetal elements that one sometimes finds in cooler climate Cabernet Franc.  The wine is deep dark purple color.  In the mouth the wine is full of black fruit flavors, with hints of blueberry and plum.  The finish is soft and supple with ripe tannins.  This is an exceptionally easy wine to enjoy.  It is silky enough to have on its own, but rich and complex enough to enjoy with a wide variety of dishes. 


Recipe of the Week: Smoked Gouda-Chorizo Jalapeno Poppers



Smoked Gouda-Chorizo Jalapeno Poppers


Ingredients:
  • 2 links Spanish chorizo, diced   ***
  • 1/2 pound smoked gouda, shredded   ***
  • 1/4 cup finely chopped red onions
  • 1 egg    ***
  • 1/2 cup cream cheese
  • 3 tablespoons sour cream
  • 1 tablespoon hot sauce ***
  • Salt and freshly ground black pepper    ***
  • 12 large jalapeno peppers, stemmed, seeded and halved

Directions:
Preheat oven to 375 degrees F.
Brown chorizo in a skillet over medium-high heat, about 8 to 10 minutes. Drain and place into a large mixing bowl. Add the cheese, red onion, egg, cream cheese, sour cream, hot sauce, and salt and pepper, to taste. Press into jalapeno halves and assemble on a parchment lined baking sheet. Bake until golden and bubbly, about 20 minutes.

2004 Dom Perignon







2004 Moet Chandon Dom Perignon Brut Champagne...$139.99
Lily-of-the-valley perfume and scents of lightly toasted brioche and almond rise from the glass of Moet’s 2004 Brut Dom Perignon, along with hints of the apricot, pear and grapefruit that then inform a luscious and creamy yet strikingly delicate as well as consummately refreshing palate. Sweet-saline savor of scallop – also already intimated in the nose – lends compulsive saliva-inducement to a ravishingly rarified and persistent finish, joined by alkaline, nutty, liquid-floral, and nori seaweed notes for a performance of head-scratching subtlety and intrigue. (In case my description hasn’t already made clear, we have here inter alia a fantastic sushi wine.) This will be worth following for at least the next 6-8 years, in the course of demonstrating that iconic status as a luxury brand, and elevated (albeit secret) production numbers by no means preclude a wine of understated as well as profound beauty.

True Tennessee Whiskey is special. It's not just whiskey made in Tennessee. And it's not Bourbon Whiskey. It's more.

To make Collier and McKeel first we bring limestone filtered water from our family farm on the Big Richland Creek and use it to make a mash of corn, rye and malted barley. Then we distill it in our hand-hammered copper pot still.

At this point it changes from plain whiskey to Tennessee Whiskey when we drip it through several feet of sugar maple charcoal, made from trees cut by local sawmills and burned on the farm. This gives Collier and McKeel the smooth, sweet, smoky taste that Tennessee Whiskey is known for. Only true Tennessee Whiskey is put through this extra step.

We age Collier and McKeel in very small barrels that are far more expensive than standard sized barrels but adds intense flavors that are our special gift whiskey making in Tennessee. Our Small Batch Tonic is essentially a quinine concentrate. It’s designed to pair with your favorite Gin or Vodka, and is then stretched with soda water to make a bright, light, refreshing highball.

Our Small Batch Grenadine is our second product, and after a year of finalizing, it is no less a labor of love.
We start with pomegranate juice from a small family farm in Madera, CA; they juice their fruit whole in a patented press that renders a matchless, robust pomegranate juice. To that we add cane sugar and orange flower water, and apply enough heat to dissolve the sugar while still maintaining the inherent zip of the fresh juice.

Jack Rudy Small Batch Grenadine is rich and full-flavored up front, and then gives way to a bright, almost tropical finish that lifts a drinks profile; use it to create new cocktails, or to revisit classic drinks like a Ward 8, Jack Rose, El Presidente, or Monkey Gland.

Tasting notes:
Striking feminine aromas of chamomile and orange-peel waft from the glass, with more orange, pine, and cinnamon on the palate. A broad silky texture and pleasing sweetness lend weight to the mouth feel, before ultimately giving way to the assertive Amaro-inspired, bitter finish.

"At 90 proof Fords Gin holds in a lot of flavor. When tasting, we recommend a splash of water to release the flavours. You'll notice the high oil content just by looking in the glass. The coriander, citrus and florals really come to life. It's also a good way to see how Fords gin will show in a cocktail." – Simon Ford, The 86 Co.


Fords Gin is distilled in London at Thames Distillers, and is a collaboration between 8th generation Master Distiller Charles Maxwell and Simon Ford of The 86 Co. The mix of 9 botanicals starts with atraditional backbone base of juniper & coriander seed that's balanced with citrus (bitter orange, lemon & grapefruit peels), floral (jasmine flower & orris) and spice (angelica & cassia). The botanicals are steeped for 15 hours before distillation in 500 liter stills.

Inspired by Dr Bill’s travels across France’s greatest vineyards and the friends made along the way, Glenmorangie Companta (Scots Gaelic for ‘friendship’) is a refined balance between bold spice and rich, smooth sweetness; the result of a careful assemblage of spirit extra matured in Grand Cru casks from Clos de Tart and those of a lusciously sweet fortified wine from Côtes du Rhône.

Tasting Notes
 Aroma:
On the nose, Companta exudes rich, 'autumnal' scents of red berries and damp forest floors, with a hint of fragrant woodsmoke complementing notes of aromatic, nutty oak.
Taste:
Upon tasting, a spicy palate redolent of cherries and stewed fruits is slowly revealed, as notes of sugared plums, blood orange and rose-hip syrup emerge alongside milk chocolate and brown sugar.
Finish:
Companta lingers on with a rich, mouth-coating finish.
